Gochugaru is a variety chili powder used in Korean cuisine, traditionally made from sun-dried taeyang-cho (Korean red chili peppers) or a spicier variety known as Cheongyang peppers.

Gochugaru is available in fine, coarse, and medium grinds. The fine and medium grinds are more often used in sauces, pastes, and marinades, or any thing that needs a red coloring, while the coarse ground is often used as a seasoning for soups and assorted side dishes.
