Chonggakmu | Ponytail Radish

Common Name: white radish, chonggakmu, bachelor radish

총각무
A smaller white radish variety used in chonggak kimchi, dongchimi (radish water kimchi), some salad like preparations, and in pickled radish dishes.
The entire radish, including greens, are used in chonggak kimchi.
Greens are used in soups, stir fry, and in some banchan dishes.

Shopping:
Bachelor Radish can be found in most larger Korean Markets, some farmers markets, and some specialty produce markets.
Look for a uniform whitish color with few to no blemishes, no soft spots, and few to no tool marks/scars. Greens should appear fresh with little to no yellowing.
