Best known use is in Baechu (cabbage) Kimchi.
Also used in some stir fry, mul (water) kimchi, steamed or lightly grilled and used as a wrap, in soups, stews, salads, and more. 

Baechu is a mild, sweet flavored variety of Napa cabbage, similar to a cross between cabbage, iceberg lettuce, and celery. It has an oblong head with tightly packed dark or pale green to white, crinkled, crisp leaves.
Shopping:
Korean or Napa cabbage can now be found in many farmers markets, larger American groceries, nearly every medium to large Korean Market, and many other Asian markets. Look for a bright white shading to a light yellow (young cabbage) or dark green (mature cabbage)with no blemishes, bruises, or soft spots. The center of the head should not have flower buds. Carefully spread the top leaves and check for insects.
